Like some of our other mountain properties, we manage the powerful and potentially brutal tannins into a rounder, more approachable 100% Cabernet Sauvignon. This is full of toasty oak, spice, cherry fruit and cassis aromas consistent with our Cabernet Sauvignon. This vintage has ripe dark fruit flavors plus a little tobacco, earth, chocolate and allspice. After an extended maceration to improve the mouth-feel, a lovely, evolved bottle-aged texture developed, with silky and powerful tannins evocative of our pristine mountain fruit.
